Biltmore Estate Château Reserve Méthode Champenoise 2017

We were so fortunate to enjoy a virtual tasting with winemaker Sharon Fenchek as she led us in exploring her Biltmore Estate Château Reserve Méthode Champenoise 2017 North Carolina Blanc de Blancs Brut Sparkling Wine.

First our tasting notes.

Pale Lemon in color. 

Dry, light body, high acidity, medium alcohol.

Nose of green apple, lemon, almond, and biscuit.

Medium flavors of green apple, lemon, peach, apricot, pear, almond, and biscuit. 

Medium Finish.

Overall quality is good.

Additional Notes from our virtual tasting:

As mentioned we participated in a ZOOM virtual tasting with the winemaker, Sharon Fenchek. We have met Sharon before at industry events, yet never the opportunity to hear her speak specifically on one wine and the winemaking process. I’ll do my best to convey her comments.

It has to be an exceptional growing year for Biltmore to create a sparkling of just North Carolina fruit. Biltmore has currently approx. 50 acres under vine, 10 of which are Chardonnay. FYI, they recently planted some Petite Manseng – a grape producing some excellent wines in the Southeastern U.S.A. 2017 was an exceptional year.

They supplemented with fruit (grape) from other AVA’s in NC. The climates are different and day to night temps can vary 40 degrees F.

2017 was a good year in North Carolina. Fruit free of disease, low PH, high acidity, lots of malic acid, harvested at 19 bricks.

Pressed lightly. (EC1118 Yeast)

After bottling in 2018, wine laid down for 1 year.

Mechanical riddling with Gyropallete. Mechanical process for disgorgement and dosage and resealing.

Thicker bottle because of the pressure inside. Agglomerated corks – look for small round disc glued to ends of the cork.

Difficult with North Carolina Chardonnay to keep the acid high through the entirety of the wine’s taste. A lot of lab testing throughout the process to ensure the quality.

Biltmore today often uses fruit from all over the U.S.A. The most visited winery in the world.

Château Reserve is a historical labeling term for Biltmore which originally referenced all North Carolina fruit used. Therefore as a tip of the hat to the past, the labeling term Méthode Champenoise is used as opposed to Méthode Traditionelle.

Listening to the winemaker describe the winemaking process just blew me away. It’s all mechanical, however, the process is the same as described in our study. Please keep an open mind to wines produced in non-traditional regions. This one is an excellent representation of a good wine produced from fruit harvested in the Southeastern U.S.A.

Tryon Foothills wine region of North Carolina.

Non-vintage newly released in February, 2021.

Decanted 30 minutes.

Medium ruby in color with a bright garnet rim.

Medium intense nose of red plum, cranberry, Bing cherry, red licorice, and freshly cut grass.

Medium bodied, and dry on the palate with medium tannins and medium acidity .

Medium flavor intensity with notes of plum preserves, cranberry sauce, cherry cola, and bell pepper, with smoke and charred wood on a medium-long finish.

13% ABV

A smooth drinking Merlot.

Our wine tonight in celebration of #OTBN #NCWine is the Meritage from Burntshirt Vineyards. 

Vintage 2016.

Bordeaux blend of estate grown Cabernet Sauvignon 48%, Petit Verdot 19%, Cabernet Franc 16%, Merlot 9%, Malbec 8%.

Meritage is an American term, not French, originating out of California, which signifies a wineries best blend of Bordeaux noble varietals. A winery must license the right to label a blend “Meritage.” 

Aged in French oak. 

We aerated for 60 minutes. 

Deep ruby in color showing long sleek legs.

Nose of blackberries, think hot blackberry cobbler just out of the oven, black currants, rum (black) cherries, vanilla, tobacco, and cocoa. 

Dry on the palate with expressive notes of bramble berry jam, dark chocolate, blackberries, vanilla, sage, and pipe tobacco, finishing long with cedar, spice, and dried herbs.

14% ABV

$30 a bottle.

Alfred Graf Erdener Treppchen Mosel 2016 Spätlese Riesling

Appearance: Pale Lemon

Nose: Light, aromas of lemon, grapefruit, pear, and green apple.

Palate:

Sweetness: Medium
Acidity: High
Alcohol: Low
Body: Light

Light, with flavors of green apple, pear, lemon, grapefruit, and wildflower honey. 

Finish: short

Conclusion: Good Quality

7.5% ABV.

Pikes Clare Valley 2018 Riesling

Following are my tasting notes from WSET Level 2 study exercise.

Pikes Clare Valley 2018 (Hills & Valleys) Riesling 

Appearance: Pale Lemon

Nose: Medium-Pronounced, aromas of lemon, lime, green apple, peach, petrol, honeysuckle, and daffodil.

Palate:

Sweetness: Dry
Acidity: High
Alcohol: Medium
Body: Light

Medium-Pronounced flavors of lemon, lime, green apple, peach, nectarine, petrol, honeysuckle, and dried dill weed. 

Finish: Long

Conclusion: Very Good Quality

Crimson Creek 2019 – JOLO Vineyards

Vintage 2019.

From the back label: The 2019 growing season here in Pilot Mountain was marked by very little rainfall, warm sunny days with a constant breeze flowing through the vineyards. This ripened the fruit slowly and at the same time dehydrated the fruit slightly which reduced our yields and in- turn accentuated the fruit flavors and varietal characteristics.

Red blend with Chambourcin base.

Deep ruby in color with a bright garnet rim.

Medium intensity nose of red cherry, raspberry, mocha, caramel, and mushroom.

Medium bodied, medium-low acidity with balanced tannins and medium alcohol.

Off dry with medium-pronounced flavors of red cherry, raspberry, cranberry, blackberry, mint, vanilla, and hazelnut.

Medium finish with notes of dried blackcurrant, and caramel .

13% ABV.

Our wine tonight is the Blackboard Red Wine by Matthews Estate of Walla Walla, Washington.

Vintage 2018.

Sourced from many Columbia Valley vineyards within Washington.

Medium ruby in color with a garnet rim.

Blend of 52% Cabernet Sauvignon, 29% Merlot, 19% Cabernet Franc.

Pronounced nose of black cherry, black plum, mocha, and dark roasted coffee.

Dry, medium-full bodied and high acidity with medium tannins.

Pronounced flavors of black plum, black currants, coffee, black licorice, and a long lingering mint and mocha finish.

A very good red blend out of Washington.

Pinot Noir – Discovery Heights

Our wine tonight is the Pinot Noir from Discovery Heights Vineyards.

Vintage 2017.

Russian River Valley AVA.

Medium ruby in color.

Pronounced aromas of red cherry, plum, pepper, and cinnamon.

Medium-light bodied with high acidity and light tannins showing beautiful legs.

Pronounced flavor profile of red cherry, red plum, strawberry, and raspberry, with a medium finish of caramel and earthy notes.

Overall this is an excellent California Pinot Noir.

We received this bottle as part of our Mountain Brook Vineyards wine club shipment.

Hardscoop Chocolate Ice Cream and Sorbet

We promised our review of the Hardscoop Ice Cream and Sorbet. 

We first saw the product advertised on Facebook. 

We purchased the Chocolate Ice Cream and the Strawberry Sorbet.

Price each $9.95 per 375mm plastic tub. 

Strawberry Sorbet 9.0 % ABV.

The Strawberry Sorbet had pronounced intense strawberry flavor. Made with real strawberries.

I feel like the sorbet would be perfect on a hot summer day by the pool. Perhaps even blended into a smoothie with your favorite vodka!

A great non-dairy option.

We score the Hardscoop Strawberry Sorbet at 87 points or Silver Medal worthy.

But OMG the Chocolate Ice Cream!!! 

Chocolate Ice Cream 8.1% ABV.

The Chocolate Ice Cream is everything we hoped it would be and more! True silky chocolate flavor with the grain neutral alcohol subtly and pleasantly present on the finish! The alcohol is similar to a top shelf vodka flavor. 

The chocolate ice cream is oh so good, simply decadent and so very worth the $10 price point!

We score the Hardscoop Chocolate Ice Cream at 97 points or Double Gold Medal worthy.

We remain interested to try the peach sorbet and other flavors of ice cream. 

Flavors available at our local Ingles were the Strawberry Sorbet, sadly no Peach Sorbet was available, the Chocolate Ice Cream, Vanilla Ice Cream, and a Coffee Flavored Ice Cream.

Our wine tonight is the Estate Riesling from Elk Cove Vineyards.

Willamette Valley, Oregon

100% Estate grown fruit. 

Color of light straw. 

Medium intense nose of lemongrass, light petroleum, green apple, green pear, melon, and apricot.

Dry on the palate, light bodied with high acidity and medium intensity flavors of lemon, grapefruit, and wildflower honey, lemongrass, apricot, and peach. Medium finish with white pepper and minerals.

13% ABV

$19 a bottle.

Overall a very good crisp drinking Riesling.
